2 tablespoons flax seeds, ground
6 tablespoons water
1 cup vegetable oil (I used safflower)
1 cup sweetener ( I used Florida Crystals)
1/2 cup Rapadura (or you can use more Florida Crystals)
2 teaspoons vanilla extract
1 cup unbleached all purpose flour
1 cup whole wheat flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg, freshly grated
3 cups rolled oats
1 cup raisins
1/2 cup chocolate chips (vegan)
Preheat oven to 350 degrees
In a blender, grind the the flax seeds with water until creamy.
Cream together oil, sugars, vanilla and flaxseed mixture.
In a separate bowl combine flour, baking soda, baking powder, salt, cinnamon and nutmeg.
Add butter mixture to flour mixture and mix well. Stir in rolled oats, raisins and chocolate chips until combined well.
Scoop out a couple of tablespoons of the dough and form into 1/2 inch thick rounds (these don't melt down that much, so shape them to look like cookies).
Bake until golden brown (about 10 - 12 minutes) Remove from oven and allow to cool.
Makes about 3 dozen cookies.
